A symphony of flavors awaits. Welcome to Spectrum a culinary haven nestled within Amsterdam’s Waldorf Astoria hotel. This isn’t just any restaurant. Spectrum boasts a rich history and a Michelin-starred reputation.
Originally opened in 2014 as Librije’s Zusje a sister restaurant to the renowned De Librije in Zwolle Spectrum quickly made a name for itself. It was a franchise not owned by the celebrated Jonnie Boer. But its identity was soon to change.
In 2019 after a refurbishment Librije’s Zusje transformed into the Spectrum we see today. This marked a new chapter a bold step towards independence. Chef Sidney Schutte a veteran of De Librije and Librije’s Zusje in Zwolle returned to the Netherlands from Hong Kong to lead the kitchen. He brings a wealth of international experience to his innovative menu.
Schutte’s tasting menus are legendary. They are designed to surprise and delight. Imagine homemade bread served with rich Jersey milk butter. Envision a savory cake that evokes a cheese board. Goat cheese lime leaf beetroot tamarillo and almond combine in a delightful explosion of taste. Even the after-dinner chocolates are a spectacle.
Spectrum’s dedication to quality is evident in every dish. Each course is a carefully orchestrated masterpiece. The restaurant received two Michelin stars in 2015 a testament to its exceptional culinary standards. GaultMillau also awarded Spectrum a high score in 2019. In 2022 it was recognized among the best restaurants in the Netherlands by Lekker culinary guide. Its ranking even rose to fourth place in 2024.
Spectrum is more than a restaurant. It’s a destination. It’s an experience that celebrates Dutch culinary heritage with an international flair. So step inside and prepare to be amazed by the magic of Spectrum.
