Perhaps Sinne’s name is a hint of what awaits you. Sinne is a small restaurant in Amsterdam’s vibrant De Pijp neighborhood. It has earned a Michelin star. That star was awarded in 2014. It is owned by chef Alexander Ioannou and his wife Suzanne Sluijter.

Sinne opened in October 2013. Just thirteen months later, it received its Michelin star. Alexander Ioannou began his culinary journey in his native Sweden. Later, he moved to the Netherlands. He honed his skills at Tante Koosje and Restaurant Elkaar. Before Sinne, Ioannou co-owned Restaurant Fyra.

Stepping inside Sinne, you might notice the open kitchen. You can see the chefs creating culinary masterpieces. The tables are close. Space is indeed at a premium here.

Sinne offers a unique dining experience. You decide the number of courses. Choose between three and eight. Let the chef surprise you. Alternatively, select from the menu. Each course features a meat, fish, and vegetarian option. Do not forget the cheese and desserts. Each dish is a fusion of Mediterranean and Oriental influences.

Imagine starting with the amuse-bouches. A crunchy cone and a parmigiano mousse tantalize your taste buds. Picture a first course of codfish. It is paired with yogurt, curry, and apple-fennel jus. A glass of South African Chardonnay complements the dish.

Consider the red prawn with green curry for the second course. It is served with a glass of crispy Greek white wine. The combination of prawn and green curry creates a delectable experience.

Envision the celeriac from the BBQ. It is accompanied by a 63C egg yolk, hazelnut, hollandaise, and truffle. A glass of Auslese Chardonnay from Pfalz in Germany enhances the earthy flavors.

Next, the Black Angus with chicory and mushrooms arrives. A glass of Somontano, a Spanish blend, complements the dish. The beef is tender. The gravy has a hint of soy sauce.

The “Going bananas” dessert is the grand finale. It features banana in rum, praline, and coffee ice cream. A glass of Mavrodaphne, a fortified red dessert wine from Greece, completes the experience.
