From the outside, &moshik might have looked more like a trendy phone store than a two-Michelin-starred restaurant. But inside, it was a world of culinary innovation. &Moshik’s unique location on Oosterdokseiland added to its charm. Chef Roth, known for his molecular gastronomy, brought a touch of magic to every dish. He blended classical techniques with modern innovations, creating a truly unforgettable dining experience. The restaurant was initially called &samhoud places. It quickly gained recognition, earning two Michelin stars in 2013, shortly after opening. This was a testament to Roth’s existing reputation and culinary prowess. The restaurant earned two Michelin stars again in November 2013, solidifying its place in the culinary world. &Moshik wasn’t just about fine dining. It also boasted a vibrant cocktail lounge where you could enjoy innovative drinks and bar snacks. Imagine savoring Calamares alla Carbonara or the unique Tomeato burger, a hamburger crafted from tomato. The “Usual” order brought forth a platter of Spanish delights like chorizo, smoked salmon, and pickled peppers. These were just glimpses into Chef Roth’s exceptional talent. He was, after all, the chef who put molecular gastronomy on the map in the Netherlands. Upstairs, the real magic happened. The state-of-the-art kitchen was Chef Roth’s workshop, where he and his team strived for culinary perfection. Sadly, &moshik closed its doors in May 2020, a casualty of the COVID-19 pandemic.
