You start by rinsing kombu and heating it in water. Before it boils, you remove the kombu. Then you add katsuobushi and let it sit. Strain the mixture through a cloth. Squeeze tightly to extract all the flavor. Blanch komatsuna and cut it into lengths. Cut kamaboko in half. Toast the mochi until slightly crispy.

In a pot, bring dashi to a boil. Add soy sauce, salt and komatsuna. Simmer for about two minutes. Arrange chicken, mochi, komatsuna, kamaboko and mitsuba in a bowl. Pour the hot dashi over it. Garnish with yuzu zest. Your Ozoni is ready.
