What secrets does Mau Tso Ngam hold? Mau Tso Ngam is a small village nestled below Kowloon Peak in Hong Kong’s Sha Tin District. This seemingly unassuming hamlet holds a unique distinction. It was one of the last villages in the New Territories to practice the ancient art of traditional tea cultivation. As of 1986, the families of Mau Tso Ngam still cultivated their own tea. They followed the customs of their ancestors. This sets them apart in a rapidly modernizing world. Imagine the villagers tending to their tea trees. These trees are planted on the edges of the hills near the village. Most families own a few trees. Others are owned by the ancestral trusts. This tea isn’t just for casual drinking. It also serves a sacred purpose. Tea made by the ancestral trust is offered to the gods. The best time for picking is during the second ten-day period of the third lunar month. This often coincides with Ching Ming. This is when families clean their ancestral tombs. Combining worship with tea picking makes for an efficient, time-honored tradition. The men and women of Mau Tso Ngam pick the tea leaves together. But it’s the women who transform these leaves into a treasured beverage. The fresh leaves are steamed in a dry wok. They are then pressed to remove moisture. Finally, they are roasted in the wok for two hours. This meticulous process takes four or five days in March. But it produces enough tea to last a family for an entire year. Mau Tso Ngam stands as a testament to the enduring power of tradition. In the shadow of towering skyscrapers and bustling city life, this small village preserves a connection to the past. It keeps the ancient art of tea making alive.
