“Why do they call it Dom-Brauerei when they don’t even brew here anymore?”. That’s a question I hear a lot here, right in front of the Dom-Brauerei. It’s true, the brewing stopped in 2005. But this building, and the Dom-Brauerei name, carry a legacy over a century old. The Dom-Brauerei wasn’t always one brewery. It started in the late 1800s, a fusion of smaller breweries in Cologne. It weathered storms, literally, when a tornado damaged their brand-new brewhouse in 1898. They rebuilt, rebranded as the Hirsch-Brauerei, and kept growing, absorbing other local breweries. By the 1930s, they were the Adler-Hirsch-AG, and later, under new ownership, became the Dom-Brauerei we know. The Second World War hit them hard, like much of Cologne. But they bounced back, and by the 1960s, Dom-Brauerei’s Kolsch was a local favorite. Though production moved on, the Dom-Brauerei name is a reminder of Cologne’s resilient brewing spirit.
