Craving authentic Japanese flavors? Yagicho Honten is your destination. Founded in 1737 by an Ise merchant, Yagicho Honten has been a cornerstone of Japanese cuisine for centuries.

Yagicho Honten began its journey in Tokyo’s Nihonbashi area. It supplied essential soup stock ingredients to historic Japanese restaurants. The eighth Shogun Yoshimune Tokugawa ruled during this time.

Now, let’s step closer to Yagicho Honten. After reopening in September 2017, the store boasts a modern design by architect Tsukasa Nagasaka. A large copper table sits at the center, inviting you to sample their products.

Yagicho Honten offers a wide array of ingredients. You’ll find dashi materials such as dried bonito, shiitake, kombu kelp, and dried sardines. They also have beans, noodles, and seasonings. These products are carefully selected in cooperation with local producers. Both restaurants and home cooks can use them.

Ever heard of Katsuo Senbei? Yagicho Honten introduced these bonito crackers at the Expo Cabinet Secretariat of Milan. They also organized a pop-up event in the United States centered around dashi and Japanese cuisine. Yagicho Honten actively promotes dried bonito and dashi globally.

Did you know Yagicho Honten offers cooking lessons? Since October 2018, the fourth floor has hosted cooking classes. Here, you can learn to make miso soup, simmered dishes, and other Japanese meals. Top-quality Japanese ingredients are used. The teachers include Mamiko Nishiyama and Yumiko. They hope to spread happiness through their classes.

Yagicho Honten sells three crucial dashi ingredients. These are kombu kelp, katsuobushi or bonito flakes, and shiitake mushrooms. They collaborate with producers to ensure exceptional quality.

Look at these Katsuobushi flakes. The fish is filleted and opened into a leaf shape. The entire manufacturing process requires many steps but Yagicho sells only high quality dried bonito flakes. These flakes are carefully selected from Makurazaki and Yamakawa areas.

Yagicho also offers exceptional Kuromame. These large black beans come from the Tamba Sasayama Area. Yagicho hand-picks the largest beans. These beans are intended for high-class Japanese restaurants.
