Why is HaSalon in Tel Aviv considered the first restaurant of chef Eyal Shani with his partner Shahar Segal? HaSalon is not just a restaurant. It is a culinary experience that has redefined Israeli cuisine.

Eyal Shani was born in Jerusalem in 1959. His passion began with his grandfather. His grandfather was an agronomist and vegan. He exposed Shani to local markets and fields.

In 1989, Shani opened his first restaurant Oceanus in Jerusalem. There, he developed his unique culinary style. It is based on Mediterranean products. These include olive oil and fresh vegetables.

‘HaSalon’ is Shani’s first restaurant with Shahar Segal and The Better Guys company. Together, Shani and Segal continued to pioneer the Israeli culinary scene. They opened successful restaurants worldwide. To this day, they own over 40 restaurants. These are in cities like Tel Aviv and Paris. They are also in London and New York.

Shani is considered the re-inventor of Israeli cuisine. He uses a poetic approach to fresh ingredients. He appeared on Israeli Master Chef for 10 seasons.
