He transformed it into a dairy to supply Old Government House and the Female Factory with milk. Macquarie added a sunken dairy processing room. A cow house and barn completed the complex.

The Dairy Precinct wasn’t always just a dairy. Around 1870 a Ranger’s Cottage was constructed next door. The Dairy Cottage became a storeroom. The old milk room still exists today.
