From the depths of a former travertine quarry rises the Brauerei Weimar-Ehringsdorf. It’s a story of beer, interwoven with the very stone of this land. The Brauerei Weimar-Ehringsdorf has quenched Weimar’s thirst for over 170 years. It stands as a testament to brewing tradition, a blend of history and hops. This brewery’s roots trace back to the Heydenreich family. Carl Johann Christian Wilhelm Heydenreich, a man of vision, acquired the Ehringsdorf estate in 1836. He saw potential in the small, simple brewery on the land, laying the foundation for what would become the Brauerei Weimar-Ehringsdorf. His son, Richard, further expanded the brewery. He had it rebuilt within the quarry between 1871 and 1883. Under the guidance of Brewmaster Pöhlmann, the brewery flourished, achieving an impressive annual output of 40,000 hectoliters. The Brauerei Weimar-Ehringsdorf continued to evolve, embracing new technologies while honoring its heritage. A new brewhouse was installed in 1933, marking a significant milestone. The post-World War II era brought change, with the estate’s expropriation during land reforms. The brewery became the Konsumbrauerei Weimar-Ehringsdorf in 1955, playing a vital role in beer production during the DDR period. The Rosenbrauerei Pössneck acquired the Brauerei Weimar-Ehringsdorf in 2000, breathing new life into its operations. Following significant investments, brewing resumed in 2003, ensuring the legacy of Ehringsdorf beer continued. Even today, the Brauerei Weimar-Ehringsdorf proudly brews its signature beers, including Ehringsdorfer Urbräu, Ritterbräu, and the seasonal Bonifatius Bock. In 2019, the brewery celebrated the Bauhaus centennial with limited-edition labels, a nod to Weimar’s artistic heritage. The brewery’s connection to the city extends beyond beer, with the Brauereiteiche Ehringsdorf, ponds created in association with the brewery, now designated as a protected landscape. The Brauerei Weimar-Ehringsdorf remains a vital part of Weimar’s identity.
