“Fermentation is not a new thing” is the first thing that comes to mind when looking at Table Ferments. Today, we are standing in front of Ferment. It is a modern restaurant in Copenhagen. Ferment started in 2015. Back then, hardly anyone knew what fermentation was. Even handmade noodles weren’t that exciting here.

Ferment evolved into what it is now. Who knows where this way of thinking will take them. Ferment is located in the center of Copenhagen. It’s near Strøget and the city hall. The area is called Pisserenden. It is also known as the Copenhagen Latin Quarter. The people at Ferment love the area. They enjoy the small community with fellow shopkeepers and inhabitants.

Ferment is not an Asian restaurant. It is not Japanese or Chinese either. They are inspired by everything and nothing. They do the things they like to eat and drink. Ferment does not follow any trends. They believe you can find inspiration in everything.

At Ferment, they do everything by hand. The exceptions are miso, soy, and rice paper. This is how they were taught. It is not necessarily the smart thing to do but the right thing to do. Fermentation changes produce into something different. In some cases, it changes something into something consumable. It is also a way to store food longer like pickling. Ferment is excited about the possibilities it gives them in food and drinks. As an added bonus, it keeps their food waste down.

They work closely with a company to reduce food waste. This company uses some of their ideas. This company feeds the homeless, addicts, and others who have a hard time. Ferment tries to make a difference where they can. They use everything they can. How about Kombucha of fermented corn husk? Why not? Sometimes it works and sometimes it does not. They live to learn and will keep on exploring.
