“Fancy a drink?” Maxime Dardeau and Solal Martin-Grondard wondered before opening Les Oeillets. Here at Sente des Oeillets, we celebrate a spot where natural wine flows. It’s a place where guest chefs create culinary magic.

Les Oeillets emerged from the minds of Maxime Dardeau and Solal Martin-Grondard. Dardeau sharpened his skills at Chambre Noire and Cave de Belleville. Martin-Grondard comes from Yard. Together, they envisioned a space that marries natural wines with innovative cuisine. The goal was simple. They want to create a haven for food and wine lovers.

Imagine stepping into Les Oeillets. You will notice the broken tile floors and pine green banquette seating. An ornate mirror reflects the lively atmosphere. The space buzzes with anticipation. Friends gather and laughter fills the air.

Behind the zinc-topped bar, Maxime and Solal curate a selection of natural wines. They have very clean options. They have Alsatian Riesling from Yann Durrmann. Also Mâcon white produced by Julien Guillot is available. For those seeking something different, La Sirène Rouge beckons. It is a Loire Cabernet Franc from Victor Rousse. J’aurai ta peau offers a Rhone roussanne orange wine produced by Matthieu Barret.

But Les Oeillets is more than just a wine bar. It is a culinary stage for guest chefs. Each chef brings a unique vision to the kitchen. On one memorable evening, Paul Alexis from Lolo Bistro took the helm. He presented homemade pork rillettes. The rillettes were awakened by spicy Basque guindilla peppers. Explosively flavorful chanterelle and black trumpet mushrooms followed. They are dressed in a memorable jus-de-viande-infused sabayon sauce. Poached and charred leeks arrived. They are served with unfussy tonnato sauce. Finally, there was a comforting miso-peanut rice pudding.

The menu also includes vegetarian and snack options. You can find Italian coppa, gorgonzola with Thai chilies and Brillat-Savarin. These are available at apéro hour.

Les Oeillets is a place of culinary exploration. It’s a place where chefs are in residence. The current chef might change on your next visit. This ensures a dynamic and ever-evolving dining experience.

The prices are reasonable. Plates range from 7 to 12 euros. This makes Les Oeillets accessible to all.

Les Oeillets is more than just a bar. It is a revolution. It is a revolution against the ordinary. It is a celebration of natural wine and innovative cuisine. So come to Sente des Oeillets. Discover this Parisian gem. Raise a glass to Maxime, Solal and the guest chefs who make Les Oeillets so special.
