Tucked away in an ordinary house in Nakagawa, nakamuLab isn’t your average ramen shop. This buzzworthy spot operates on a reservation-only basis. nakamuLab is the brainchild of Takashi Nakamura, a Fukuoka native. He honed his skills in ramen shops across Tokyo and Singapore before returning home. Nakamura envisioned a place to experiment and refine his unique ramen creations. Thus, nakamuLab was born, initially as a testing ground before transforming into the restaurant it is today. His goal was simple: to perfect his craft and draw in customers. Despite the reservation system, Nakamura keeps his prices accessible, starting at ¥740. Interestingly, nakamuLab doesn’t specialize in the local tonkotsu ramen. Instead, Nakamura focuses on tori-paitan soba, a type of chicken ramen, and its spicier counterpart, tantanmen. The star of the show is the creamy, emulsified chicken soup. Nakamura achieves its smooth texture and mellow mouthfeel by using a blender, incorporating air bubbles that enhance the soup’s richness. If you’re venturing south of Fukuoka, perhaps towards Nakagawa, nakamuLab makes for a delightful stop.
