His philosophy? “High turnover – small profit.” He focused on quality ingredients, impeccable service, and an abundance of choices. This approach made the Gundel Restaurant a beloved destination for everyone, from park-goers enjoying a simple pretzel to the elite attending lavish banquets. The Gundel was even chosen to host a state banquet for King Victor Emmanuel III of Italy in 1937. The restaurant’s fame extended beyond Hungary’s borders. In 1939, Károly Gundel oversaw the Hungarian pavilion at the New York World’s Fair, introducing Hungarian cuisine to the world. The New York Times declared the Gundel Restaurant a better advertisement for Budapest than any tourist brochure.
