Hidden behind an unassuming Sutter Street storefront, the Fleur de Lys was more than just a restaurant. It was a San Francisco legend. For 28 years, it captivated diners with its classic French cuisine and elegant ambiance. The Fleur de Lys first bloomed in the late 1950s. It wasn’t until 1970, when Maurice Rouas purchased it, that its story truly began. Then in 1986, Rouas brought in Chef Hubert Keller, formerly of Sutter 500. Keller’s Alsatian background infused the classic French cuisine with innovative dishes. He used French techniques and fresh, seasonal California ingredients. The Fleur de Lys wasn’t just about the food. It was an experience. The restaurant’s interior, designed by Keller’s wife Chantal after a devastating fire in 2001, resembled a luxurious tent. Hundreds of yards of red brocade draped the walls, culminating in a peak from which hung a massive crystal chandelier. This unique design, along with the use of mirrored glass, created an intimate and surprisingly quiet space. The hushed atmosphere allowed guests to savor every bite and appreciate the impeccable service. The Fleur de Lys was known for its extensive wine list. It featured over one thousand selections, including rare vintages from prestigious French chateaux. The restaurant’s wine director, Marcus Garcia, was a local jazz and blues musician with a deep knowledge of wine. He guided diners through the impressive cellar, pairing each course with the perfect complement. The Fleur de Lys consistently earned accolades, including a Michelin star and a four-star rating from the San Francisco Chronicle. It was also ranked among the top restaurants in the United States by Food & Wine magazine. The restaurant’s fixed-price menu offered three, four, and five-course options. This allowed diners to tailor their experience to their appetite and budget. Despite its upscale reputation, the Fleur de Lys maintained a surprisingly approachable atmosphere. It attracted a diverse clientele, both young and old, who appreciated the restaurant’s commitment to quality and hospitality. Sadly, the Fleur de Lys closed its doors in June 2014. Its legacy, however, continues to resonate in San Francisco’s culinary landscape. It serves as a reminder of a time when dining was an art form.
