In the early days, La Cueva del Oso opened on weekends and holidays. They served caldo de gallina, trout, and parrillada. They were pioneers in offering roasted lamb. The restaurant’s unique name, La Cueva del Oso (The Bear’s Cave), came from a simple wooden sign crafted by Doña Wilma’s nephew. He was tasked with creating a sign for the newly opened restaurant. Upon Doña Wilma’s return, she found the charming “La Cueva del Oso” sign in place. La Cueva del Oso’s specialty is “Asado de Borrego” (Roast Lamb) and “Trucha al Carbón” (Charcoal Trout). These dishes use 100% local ingredients. The restaurant champions Lloa’s unique cuisine, passed down through family generations. Doña Wilma’s son, Carlos Tixe, brings his 20 years of experience working in five-star restaurants in Ecuador and Spain. In 2022, La Cueva del Oso underwent a significant renovation. The remodeled space offers a warm, family-friendly atmosphere where visitors can savor delicious meals. The restaurant’s motto, “Carbón y Tradición” (Charcoal and Tradition), reflects its commitment to traditional Andean cooking methods.
