Chef Daisley Gordon has been part of Café Campagne for nearly 30 years. He started as a cook. In 2016, he became the owner. Gordon aims to honor the connection between Northwest lifestyle and French culinary roots. He explores new menu offerings.

Café Campagne uses only the finest locally and internationally sourced ingredients. They hand craft almost everything in house. This includes fresh sausages and other charcuterie. Duck confit and smoked salmon are also house made. The wine director individually selects wines. Staff are educated in the respectful handling, storage and service of these beverages.

Café Campagne goes through an 80-pound wheel of Comté cheese a week. That’s approximately 125000 pounds of cheese over the decades. The cheese is imported from France. It’s made from the milk of two specific breeds of cows. These cows are raised to exacting Protected Designation of Origin standards in the Jura Mountains. Each cow has 2½ acres of summer pasture land. This land is known for its wildflowers. All that Comté finds its way into Cafe Campagne’s quiche and onion soup.

Owner Daisley Gordon isn’t going anywhere anytime soon. Future plans include a small expansion. It will be a place to sell things such as cassoulet to go. Ready-to-use pie crust might also be available. Maybe more Comté will be sold here too. It will also function as a production kitchen for the restaurant.
