Flour dusted the air, a constant companion to the workers of the Pillsbury A-Mill. Here, on the banks of the Mississippi in Minneapolis, stands the Pillsbury A-Mill. It reigned as the world’s largest flour mill for an impressive 40 years. The Pillsbury A-Mill began its life in 1881. Charles Alfred Pillsbury envisioned a mill that would surpass all others. He sought the best milling techniques worldwide and, unusually for the time, commissioned an architect, LeRoy S. Buffington, to design a visually appealing structure.
The Pillsbury A-Mill wasn’t just a functional building. It was designed to be aesthetically pleasing as well. Construction, led by George McMullen, was completed in 1881. The mill’s initial capacity was an astounding 5,000 barrels a day, a huge leap from the then-standard 500-barrel mills. This output eventually increased to a staggering 17,500 barrels a day.
The Pillsbury A-Mill was a marvel of engineering. Its seven floors and basement were meticulously organized for efficient production. Water flowed into the basement, powering two massive direct-drive waterwheels, each capable of generating 1,200 horsepower. One was later replaced with an even more powerful 2,500-horsepower turbine in 1901. The first floor housed sifters, while conveyor belts and a staff lunchroom occupied the second. The upper floors held a complex network of belts, bins, dust collectors, grinders, and other essential machinery.
The building’s structure is a testament to its enduring strength. Built with Platteville limestone foundations and thick stone walls, it withstood the constant vibrations of the milling machines. However, those vibrations weren’t without consequence. The walls still bow inward 22 inches at the top, a visible reminder of the mill’s powerful machinery. Remarkably, unlike other large mills in the area, the Pillsbury A-Mill never succumbed to fire or explosions. Its original wood frame remains intact.
The Pillsbury A-Mill ceased operations in 2003. After a period of vacancy and a failed redevelopment plan, the mill found new life in 2013. It was transformed into artist lofts, incorporating sustainable features like a new hydroelectric turbine in the original water tunnel and a hydrothermal system. These improvements earned the building LEED Gold Certification in 2017. The Pillsbury A-Mill stands as a testament to industrial ingenuity and architectural beauty. It’s a story of innovation, adaptation, and the enduring legacy of a Minneapolis landmark.
