A tlachiquero, a harvester of agave’s liquid gold. Here at Tlachiquero, we delve into the heart of an ancient tradition, a dance between man and nature. The tlachiquero, the person who coaxes forth the aguamiel, the honey water, from the heart of the maguey. This isn’t about tequila or mezcal, those fiery spirits born of the piña, the heart of the agave. Tlachiquero is the story of pulque, a milky, slightly viscous drink, older than the conquistadors, a drink of gods and rituals. Imagine the tlachiquero, his acocote, a gourd or perhaps now a plastic bottle, drawing forth the aguamiel. Twice a day, he returns to the maguey, scraping the core, coaxing more of the sweet liquid to flow. A single maguey, patiently nurtured for 8 to 15 years, can yield up to 1,000 liters of aguamiel before its life cycle ends. The tlachiquero pours the aguamiel into a vat. The air itself initiates the fermentation, transforming the sweet sap into pulque. Perhaps he adds a timbre, a tree branch, to hasten the process. Or maybe some hibiscus, lime, seeds, or roots to thicken the brew. Here at Tlachiquero, we see the echoes of ancient rituals. The Nahuatl word tlachiquiliztli, “to scrape,” whispers from the past. The maguey, Mayahuel, a gift from the gods. Pulque, once reserved for royalty and rituals, now a common drink. Tlachiquero, a living link to a pre-Hispanic world.
