Ever wondered where some of the most important brewing discoveries were made? That place is right here at the Carlsberg Laboratorium.

Welcome to the Carlsberg Laboratorium. It is a place where science and brewing intertwine. This laboratory has a rich history that changed beer forever.

In 1875, J. C. Jacobsen, the founder of Carlsberg, established this laboratory. He wanted to advance biochemical knowledge, especially regarding brewing. The Carlsberg Laboratorium had two main departments. These were the Department of Chemistry and the Department of Physiology.

One of the most significant achievements at the Carlsberg Laboratorium was the isolation of Saccharomyces carlsbergensis. This is the yeast species responsible for lager fermentation. In 1883, Emil Christian Hansen made this groundbreaking discovery. Carlsberg generously shared this yeast with other brewers. This act revolutionized the brewing industry worldwide. Today Saccharomyces carlsbergensis is the most widely used lager yeast.

Another pivotal contribution from the Carlsberg Laboratorium is the concept of pH. Søren Peder Lauritz Sørensen, a Danish chemist working here, introduced the pH scale. He understood the importance of hydrogen ion concentration. This scale is essential for measuring acidity and basicity.

The Carlsberg Laboratorium has had several notable directors. Johan Kjeldahl was the first director serving from 1876 to 1900. S. P. L. Sørensen followed him from 1901 to 1938. Later directors included Kaj Ulrik Linderstrøm-Lang and Martin Ottesen.

In 1972, the laboratory underwent a transformation. It was renamed the Carlsberg Research Center. The laboratory was then transferred to the brewery. This change marked a new chapter. The Carlsberg Laboratorium continued its research.

Carlsberg’s commitment to science extends beyond brewing. The Carlsberg Foundation manages the laboratory. It also supports scientific research in various fields. These fields include natural sciences, mathematics, and humanities.

Standing here, you are at a place where brewing history was written. The Carlsberg Laboratorium’s discoveries have shaped the beers we enjoy today. From yeast to pH, this laboratory has left an indelible mark. Its legacy continues to influence brewing and scientific research.
