Can you smell that hoppy aroma? It’s a distinct scent that hangs in the air around Revolution Brewing, a Chicago institution. Revolution Brewing started as a brewpub dream in Josh Deth’s mind while he was working at Goose Island in the late 1990s. His dream came to life in 2010 when Revolution Brewing opened its doors in Logan Square. This brewpub quickly gained a loyal following. Their Anti-Hero IPA, a Midwest IPA classic, propelled them to open a larger production brewery and taproom on Kedzie Avenue in 2012. Revolution Brewing quickly expanded, tripling its production to 24,000 barrels by 2013. They’ve earned accolades at prestigious events like the Great American Beer Festival and the World Beer Cup. Interestingly, Revolution Brewing even made its Hollywood debut in the 2013 film “Drinking Buddies.” The movie, starring Olivia Wilde and Jake Johnson, is partly set in the brewery and taphouse, with the main characters working at the fictionalized version of Revolution Brewing. Revolution Brewing produces over 20 different beers, from the flagship Anti-Hero IPA to the rich Deth’s Tar, a barrel-aged Russian imperial stout. Head Brewer Jim Cibak prioritizes balance in every brew, ensuring each beer, regardless of its ABV, is a refined and enjoyable experience. They even use a unique dry-hopping technique, adding hops a few points above terminal gravity and at a specific temperature to enhance the hop aromas.
