“Have you ever dined in a stadium?” I ask. Here we are at Geranium, a world-renowned restaurant. It is perched atop Copenhagen’s national soccer stadium. This location is quite unexpected. Forget the cheap soda and fast food. Prepare for an unforgettable culinary journey.

Geranium opened its doors in 2007. Rasmus Kofoed and Søren Ledet were the visionaries. Initially, it was located in Kongens Have. The restaurant quickly earned a Michelin star in 2008. It was forced to close in 2009 due to unforeseen circumstances. Geranium found a new home in Parken in 2010.

Rasmus Kofoed’s talent shines here. He is the head chef. He won the Bocuse d’Or in 2011. This is a prestigious global cooking competition. Kofoed remarkably secured gold, silver, and bronze medals over the years.

Geranium received its second Michelin star in 2013. Then came the ultimate recognition. In 2016, it became the first Danish restaurant with three Michelin stars. The World’s 50 Best Restaurants named Geranium the world’s best in 2022.

The dining experience at Geranium lasts about three and a half hours. Guests move to a lounge area after the savory courses. There, they enjoy dessert. This allows for a relaxed finish and the restaurant can prepare for the next service.

Kofoed’s dishes are artful. They are rooted in nature. Progressive techniques enhance them. The marbled hake is a signature dish. Thinly sliced hake is pressed. It is swirled with ash from burned parsley stems. The plate itself mirrors this pattern.

Geranium caters to all diners. Gluten-free bread is offered. These golden rolls are crowned with seeds. They are so good, they could fool anyone. This shows Geranium’s dedication to every guest’s satisfaction.

A special table offers views of the kitchen. This table for two sits beside the open kitchen. But the sun-drenched dining room offers glimpses for everyone.

Søren Ledet, the sommelier, is a wine wizard. He has won Wine Spectator’s Grand Award. His wine program is extraordinary. Ledet initially created a wine list of organic and biodynamic selections. This complemented Kofoed’s nature-inspired cookery. Today, the selection has grown to 2,500 bottles.

Both Ledet and Kofoed have chef backgrounds. They planned to split duties between the kitchen and front-of-house. Kofoed found his passion in the kitchen. Ledet discovered his love for hospitality and wine.

Geranium isn’t just a meal. It’s an experience. It combines innovative cuisine with impeccable service. Each dish tells a story. Each pairing is carefully considered. It’s no wonder Geranium has reached the pinnacle of culinary excellence. From its unlikely location to its artistic dishes and world-class service, Geranium redefines fine dining.
