Elliot’s impact extended beyond business. During World War One he served on the National Efficiency Board. He was also on the Military Service Board. He even headed a commission investigating a post-war influenza epidemic in Samoa. This devastating epidemic killed about 8500 Samoans. The commission found fault with Auckland port authorities. They allowed a ship carrying the disease to leave. The epidemic then spread to Tonga.

His generosity is also remembered. The Sir George Elliot Charitable Trust was established in 1956. It supports community work and education. Elliot anonymously donated to St Kentigern College and St Cuthberts College. His initial donation to the trust was a huge sum. It amounted to 37000 pounds equivalent to well over 1200000 dollars today.
