Hakata Ramen, from Fukuoka City, offers a lighter pork bone soup. It features thinner noodles. Many shops allow you to customize noodle firmness. “Harigane” means extra firm. “Futsu” means normal.

Nagahama Ramen, also in Fukuoka City, was created for busy fisherman. Thin noodles ensured quick preparation. The “kaedama” noodle refill system may have started here. Hakata and Nagahama ramen often include benishouga and sesame seeds.
