Seven generations. Seven generations of Zitzmann millers have poured their hearts into this very building. The Zitzmannm\u00fchle Ingersleben stands before you a testament to time and family legacy. Founded in 1847 it has weathered storms both literal and figurative. This isn’t just a mill. It’s a living history.

The Zitzmannm\u00fchle Ingersleben isn’t your typical milling operation. It’s a family business. Gustav Zitzmann bought it at auction in 1898. He started a tradition that continues to this day. His descendants have kept the mill running almost without interruption. Today Konrad Zitzmann and his family oversee operations. Fifteen employees and two apprentices work tirelessly. They produce 70 tons of flour daily. Almost everything is automated from analysis and sorting to grinding and packaging.

Most of the flour is delivered loose in tankers. Only a quarter is packaged in sacks. They primarily serve bakers. The bakers don’t need to come to them. The mill brings the flour to them. The Zitzmannm\u00fchle Ingersleben has always emphasized regional ingredients. Initially it used locally sourced grain. Now the mill sources from an 80-kilometer radius. The quality of their flour is judged by its smell taste appearance and above all its regional origins.

The mill’s history is rich in resilience. Even when the East German government nationalized it the Zitzmann family remained at its heart. Rudolf and Kurt Zitzmann kept the mill running under the state-owned Kombinat for Getreidewirtschaft. As soon as possible they reclaimed it. Since 1992 it proudly bears the name of its founder once again.

Even today the Zitzmannm\u00fchle Ingersleben faces new challenges. High energy prices threaten the business. To reduce energy reliance they’ve installed a water turbine. Sadly the Apfelst\u00e4dt stream is too shallow. The turbine only runs intermittently. They are investigating solar panels. This would allow them to power their operations using renewable energy.

But through it all the Zitzmann family perseveres. They continue to produce a wide array of flours. This includes specialty flours for pizzas stollen and pastries. They even have their own shop now. This sells all their different types of flour including wheat rye and spelt. They also offer conventional and organic products.
