Sant Jordi de ses Salines is a charming village in southern Ibiza. It belongs to the municipality of San Josep de sa Talaia. The village sits close to Ibiza Town and the airport. It is also near the popular Playa d’en Bossa. Sant Jordi uses its Catalan name almost exclusively, not the Spanish “San Jorge.”

It is St. George’s Day. There is a procession of sacred statues. Stalls sell local food and crafts. Live music fills the square at night. Tradition dictates women receive a red rose. It reminds them of St. George slaying the dragon. Legend says roses grew where the dragon’s blood fell.
