Oberrad a Frankfurt district. It’s known as the gardeners’ village. For centuries Oberrad supplied Frankfurt. It provided herbs for the famous Grüne Soße. This is Frankfurt’s beloved national dish. A hearty green sauce it’s served with boiled potatoes.

The recipe is a closely guarded secret. Seven herbs are used. Some are parsley chives and cress. Borrage and sorrel might be included. Kerbel or pimpinelle can also be added. Dill however is strictly forbidden. The herbs for the Grüne Soße grow locally. They flourish in Oberrad’s fields and greenhouses. About 130 hectares of Oberrad is dedicated to farming. Twelve agricultural businesses work this land. Many herbs for the famous sauce grow here. These fields stretch north and south of the district.

Dedicated in 2007 they symbolize the seven herbs. Kerbel cress borrage parsley pimpinelle chives and sorrel are represented. At night the greenhouses illuminate. They glow like beautiful emeralds.
