What is the color of a sapphire? You might say blue, and you wouldn’t be wrong. But Ein Sapir, which translates to “Sapphire Spring,” is known for its strikingly clear, turquoise waters. Situated within a cave on the outskirts of Jerusalem, Ein Sapir offers a magical escape from the city’s bustle. This spring is more than just a source of fresh water. It represents a piece of Israel’s complex history. Established in 1949, Ein Sapir was built on land that once belonged to the Palestinian village of ‘Ayn Karim. The founders, Hebrew repatriates from Kurdistan, named it either after a travel book by Rabbi Yaakov Halevi Sapir or the finance minister Pinchas Sapir, who encouraged Diaspora investment in the newly formed state. Today, Ein Sapir is a popular destination for locals and tourists alike. Many come to hike the Jerusalem Trail, a 42-kilometer path that passes through the moshav and intersects with the Israel National Trail at the nearby Ein Hindak spring.
