“Olives, olives everywhere!” Does the scent of brine tickle your nose? Welcome to the Great Habous Olive Market in Casablanca. Today we explore the heart of the Habous Quarter with its rich history.

The Habous Quarter is a unique blend of contemporary Morocco and its ancient past. It’s also known as the “New Medina”. The district developed during the French protectorate from the 1920s to 1930s. It accommodated families of merchants from various Moroccan regions. Hubert Lyautey, the first French Resident-General in Morocco, kept Moroccan and European residential areas separate.

The Habous Quarter takes its name from the Moroccan word “habous”. It refers to the traditional religious assembly managing dwellings within the medina. The neighborhood plans were designed in 1917. Albert Laprade, Henri Prost’s deputy, followed by Auguste Cadet and Edmond Brion. Chaim Bendahan, a wealthy landowner, gave the land to the Habous administration.

Now, about the Great Habous Olive Market. You will discover an assault on the senses. The pungent smell of brine fills the air. The market itself is tucked away off a main street. The courtyard has cobblestones and an olive tree in the center.

Morocco is a top producer of olives. It has the perfect Mediterranean climate for growing them. The olives are packed with antioxidants, healthy fats, and vitamins A and E.

Interestingly, the different olive colors refer to ripeness. Green olives are unripe. Darker olives like red, brown, purple, and black are the ripest. They have been left on the tree longer.

At the Great Habous Olive Market you will be spoilt for choice. There are barrels of olives preserved in different ways. Some are raw and bitter. Others are cured in brine or salt. Spices like garlic, chillies, rosemary and thyme are used for marinating the olives.

Wander through the sellers to decide which olives you like best. Don’t hesitate to taste them before you buy. Shop owners are friendly. They will let you taste as many as you want.

The Great Habous Olive Market is a must-visit in Casablanca. It is located in the Habous Quarter. Whether you’re an olive lover or not, it’s worth a stop. Experience the quiet courtyard and chat with local sellers. Escape the flurry of Casablanca. Who knows you might even turn into an olive lover?
