“Hu tieu Nam Vang” might sound like a tongue twister. But trust me it is a flavor explosion. We are standing in front of Hong Phat, a Saigon culinary institution. It all began in 1975 with a humble stall. This stall served hu tieu Nam Vang in the founder’s in-laws’ house.

Hong Phat is more than just a restaurant. It is a story of resilience, adaptation, and culinary innovation. The founder Chef Đặng Thị Nguyệt was born in Phnom Penh in 1948. She started working in a restaurant at the age of 13. Political turmoil forced her to move to Saigon in the 1970s. Despite the ongoing war, she pursued her dream of opening her own restaurant.

Chef Đặng drew inspiration from her time in Phnom Penh. Phnom Penh was a melting pot of Khmer, Vietnamese, and Chinese communities. She combined it with local Saigon tastes. Versions of hu tieu existed in Saigon. Chef Đặng added her unique touches using sundried noodles for a chewier texture. She added fresh greens and seafood. Tiger shrimp, crown daisy, and Chinese celery found their way into the dish. So did bean sprouts, lettuce, and chives. Quail eggs, braised offal, and her own minced pork completed the masterpiece.

In 1979, Hong Phat invested in glass bowls imported from France. These bowls set the dish apart from other Vietnamese noodle soups. Other soups were served in ceramic bowls. This gave hu tieu Nam Vang its signature look.

Today, Hong Phat occupies the same location it did in 1975. The space and menu have expanded. Hu tieu remains the star, served as a soup or dry with soup on the side. Other noodle dishes such as mi vit tiem and mi hoanh thanh are also available. Non-noodle options like banh mi bo kho and com chien Duong Chau are there too. Sides include cha gio tom cua, banh bao, and pâté chaud.

The back dining room holds a clue to Hong Phat’s roots. A large wooden sculpture shows Bayon. Bayon is an iconic temple of Angkor. Chef Đặng wants to remind customers of the restaurant’s origins.

Hong Phat has earned a Bib Gourmand recognition. This award is for good quality and good value cooking. This humble noodle shop symbolizes the culinary marriage of cultures. It offers an all-day dining experience. Locals flock here especially for breakfast. The soft rice noodle soup bursts with flavor. It contains minced meat, liver, and fresh tiger shrimp. Braised blood curd is also included with herbs and bean sprouts. Don’t forget to try the cha gio tom cua. They make a great appetizer.

So, as you savor each spoonful of hu tieu. Remember the journey of Hong Phat. It is a journey from Phnom Penh to Saigon. A journey of a determined chef. A journey of a dish that embodies the spirit of Saigon.
