The Kollergang also played a crucial role in chocolate production, known as a “melangeur.” These behemoths, with granite or iron components, mixed and coarsely ground the core ingredients: cocoa beans, cocoa butter, sugar, and milk products. In historic oil mills, Kollergangs crushed nuts, releasing precious oils. In paper mills, they separated fibers. While less common today, the Kollergang’s legacy endures, a reminder of a simpler, yet effective technology.
